- 3 tablespoons butter
- 2 cups milk
- 1/4 c. all-purpose flour
- 2 cups white cheddar, grated
- 1 c. Romano cheese, grated
- 1/2 lb. macaroni
- salt and pepper, to taste
- cayenne and paprika, to taste
Melt butter in a saucepan over medium heat. Add flour and whisk for one minute. Add milk and continue to whisk until it’s bubbly and thick. Remove from heat and add grated cheeses and seasonings.
Boil macaroni according to package directions. Drain well. Stir macaroni into cheese sauce.
Pour macaroni and cheese sauce into greased ramekins. Top with coarsely chopped homemade bread crumbs tossed with butter. Bake at 350 degrees F for 30 minutes or until top is browned.
