Cheddar Corn Fritters Print Recipe

  • 2 cups corn meal
  • 1 c. flour
  • 2 teaspoons baking powder
  • 2 eggs beaten
  • 2 cups milk
  • 1/4 c. green onions, finely chopped
  • 1 tsp. fresh herbs, chopped
  • 1 tbsp. sugar
  • 1 c. (4 oz.) Cheddar cheese, crumbled
  • Hot sauce, to taste
  • Salt and pepper, to taste

In a large bowl mix all ingredients except the Cheddar. Mix until you have a pourable, but still thick batter. Fold in the crumbled Cheddar.

In a pot of preheated oil, or deep fryer drop spoonfuls of the batter into the hot oil. Cook for about 5 minutes or until floating. Remember to turn them half way through frying.

Serve warm.
