- 1 c. mayonnaise
- 2 tablespoons prepared pesto
- 4 cups potatoes, peeled, diced, cooked
- 1/2 c. celery, chopped
- 1/2 c. green onion, sliced
- 1/2 c. red bell pepper, diced
- 1 c. pepper jack cheese, cubed
- 1 tbsp. Parmesan cheese, grated
In a small bowl, combine mayonnaise and pesto. Set aside.
In a medium bowl, combine potatoes, celery, onion, pepper and pepper jack cheese. Add dressing and toss lightly. Sprinkle with Parmesan cheese. Serve chilled.
